Main Duties And Responsibilities

To maintain the areas for which you are responsible to the highest standards of cleanliness and to ensure that they are in an orderly manner.

To ensure that all equipment for which you are responsible is stored and provided to the various outlets in the highest standard of presentation and in a hygienic manner.

To maintain par stocks of all items, as agreed, and to ensure that breakage’s are kept to an absolute minimum.

To maintain a tight financial control in all areas with regard to budget.

To ensure absolute compliance with the legal and Resort requirements with regard to fire, health and safety and with particular reference to hygiene.

Cleaning

To maintain all areas in a condition in compliance with Health & Safety standards and ensure that all fire exists and appliances are kept clear.

To ensure that all rubbish is cleaned on a regular basis and to maintain rubbish collection points in a hygienic condition.

To ensure compliance with area / departmental cleaning schedules.

To maintain a log of all deficiencies in the areas of responsibility and report them to the Maintenance department following the agreed procedure.

Washing-Up

To ensure that the washing-up operation is carried out to the appropriate schedule in a hygienic and safe manner.

To ensure clean and dirty items are kept separate and each are stored in their respective areas safely and hygienically.

To ensure that glass racks are mounted on castors provided and not stacked directly on the floor.

To ensure correct operation of the dishwasher, burnished and waste disposal unit according to the manufacturers specifications.

To ensure that the silver receives proper treatment and is cleaned/ burnished according to the schedule. Make spot checks on silver kept in departments and recommend to Head of Departments when to send it in to the silver room to be cleaned/ burnished/ polished.

To ensure the department has the correct supply of cutlery, crockery and silver for use at all times.

Stores/ Stores Issuing

To maintain stocks with reference to the agreed par stocks of:

  • China
  • Glass
  • Silver
  • Cleaning Materials

To issue items, as required, to departments.

To control breakage’s and loss and recommend to the Director of Food and Beverage, methods for improvement in controlling these items.

To recommend to the Director of Food and Beverage, ordering requirements for these items on an agreed time scale.

To undertake inventories, as required, on operating equipment and reserved stocks.

To ensure that all equipment required for each banqueting function is ready at the time required and is in a clean and hygienic condition.

To collect damaged silver and arrange for repair. Ensure use in Hotel purchasing policy.

Health, Safety and Hygiene

To ensure strict compliance with the hygiene regulations.

To ensure a safe working environment.

To report to the Director of Food and Beverage any malfunctions, hygiene faults of safety hazards.

To ensure that all employees are aware of and trained in fire precautions.

To ensure that special attention is paid to the rubbish chute and the area around the garbage collector.

To ensure that only employees that have been fully trained use the pressure cleaning machine.

To ensure that all cleaning liquids are kept in the correct containers and are suitably labelled.

To ensure compliance and action plans are put in place following the internal audits recommendations.

Staffing and Training

To recommend changes, promotions, transfers or dismissals to the Director of Food and Beverage.

To compile staff rotas and arrange staff holidays subject to agreed policy.

To keep records of staff hours on duty, absenteeism and sickness, and notify the wages department each Monday morning.

To ensure that all employees are trained in all procedures with reference to the departmental manual.

Preferred Qualifications And Skills

Luxury Hotel Experience Preferred as a Stewarding Manager.

Good Attitude.

High level of communication in French and English

Moroccan passport holder.
